NV Savart l’Accomplie

The new release of old vine bottling of Savart l’Accomplie is composed of a blend of
eighty percent pinot noir and twenty percent chardonnay. Eighty-five percent of the vins clairs for this wine are barrel-fermented and do not go through malo. The wine delivers excellent precision in the bouquet, which wafts from the glass in a fine blend of apple, white peach, fresh baked bread, chalky soil tones, a touch of almond and vanillin oak. On the palate the wine is pure, full and racy, with a rock solid core, great mineral drive, elegant mousse and plenty of cut and grip on the very long, perfectly balanced and nascently complex finish. This will age beautifully, but is not all that hard to drink out of the blocks! Fine, fine juice that is a touch oaky out of the blocks, but which will absorb this component effortlessly with some time in the cellar. Rated JG93+.

The family’s vinification practices leans toward a traditional method where different parcels are vinified separately. Natural yeast is used in smaller tanks and malolactic fermentation is avoided. This allows the wine to be full in flavour and finely balanced at a low dosage while showing firmness of structure.

Blended with 33% Chardonnay, 33% Pinot Noir, 33% Pinot Meunier.

Our wine dinner series continues on. After Burgundy and Champagne, now the one which many enthusiasts have been waiting for – JURA. Not any Jura but Juras from the legend – JF GANEVAT. WEA will be featuring a horizontal of some of his most representative cuvees in a ONE NIGHT ONLY wine pairing dinner.

Situated within the ever quirky Wanderlust Hotel, Audace (short for Audacity) is an invitation to discover new taste experiences that push boundaries, serving up modern bistro fare with a contemporary touch.

Chef Jeremy Gillon joins the Unlisted Collection group, formerly from Le Montana where he was Executive Chef of three of the hotel’s restaurants for eight years. Under his leadership, the hotel’s Restaurant L’Epicurien received its first ever Michelin Star in 2015 and retained it for the second year running in 2016. Chef Jeremy has also worked for a long list of coveted chefs and restaurants in France, including 2 Michelin Star restaurants Alexandre in Garons and Le Chabichou in Courchevel.
